How to create the perfect Fruit Souffles…

Ingredients…

80 g of caster sugar

130g of whites

90g puree

 

To make… 

Whip the egg whites into a bowl with the first 40g of sugar and whisk to soft peaks

Add the second 40g of sugar and continue to whisk it until it reaches the semi-firm peaks

Carefully fold the whites into the fruit puree

Then bake at 185 degrees for six minutes
